Story

Grown at high elevations in Grecia, West Valley, Costa Rica, this coffee comes from Cerro San Luis Micromill, two family farms and a small mill owned by siblings Alexander and Magali Delgado, along with their spouses. The Delgado siblings have focused on growing different varieties of coffee and currently grow over 10 different types of coffee.

This lot is processed as White Honey, a method the family developed themselves. Cherries are sorted and depulped shortly after harvest, then moved straight to raised beds for a few days at a shallow depth before finishing under cover on a patio.

It's a lighter touch than a full honey process — less mucilage left on the parchment — built to protect the clarity of a variety like SL-28 rather than compete with it. The result is a cup shaped by both a distinctive genetic line and a process designed with real intention, from a family that's still actively deciding what this farm can be.

Cerro San Luis Micromill sits in Grecia, in Costa Rica's West Valley — a region known for cool, high-elevation microclimates that concentrate sugar in the cherry and for producing a disproportionate share of Cup of Excellence winners. The Delgado family's farms sit adjacent to one another, each plot named separately for lot tracking, with a small mill at the family home a few miles away where cherry is processed into washed, honey, or natural lots depending on the harvest. The West Valley is also home to the Villa Sarchi mutation and a number of Kenyan varieties like SL-28, making it one of the more genetically diverse coffee-growing regions in the country.
