Story

This fully washed lot comes from Shakiso, where 310 smallholder producers have refined clean, bright processing into an art. Cherries are hand-selected, depulped within six hours of picking, and fermented 24–36 hours depending on ambient temperature. A multi-channel washing system clears any remaining mucilage before the coffee moves to raised beds for a slow, 10–14 day dry.

The result is clarity defined by Guji’s unique biodiversity—floral aromatics, stone fruit sweetness, and a citrus acidity that rings clean through the cup.

The Biru Bekele Washing Station sits in Odo Shakiso, in Ethiopia's Guji zone, at 1,800 to 2,100 meters — elevation that does a lot of the work behind this coffee's clarity. It's named for its founder, Biru Bekele, a coffee grower of over 18 years who opened the station in 2019 to give the region's cherries the processing they deserved. Farms nearby bring their harvest here, where careful, hands-on processing turns raw cherry into the clean, expressive beans the region is known for. It's a lot shaped as much by place as by process.
